Lemon Pepper Chicken Wings


I love lemon pepper wings. Adding lemon and pepper to any kind of chicken is always a winning combination.

Since I can't eat nightshades or spices made from them due to of autoimmune issues, barbecue chicken wings were no longer an option.

I looked at commercial lemon pepper seasonings, but found that the main ingredients in all of them was sugar. That's frustrating, when you try to eliminate sugar from your diet.

So, I came up with this recipe from scratch. It is delicious and mouth watering just thinking about it.

Quick notes about the ingredients:

Redmond's Real Salt is ancient sea salt. Unlike regular sea salt, it is not contaminated with micro plastics. Himalayan salt is also an option, but fraudsters caught onto the trend and have been dyeing cheap salt pink.

Lakanto is a blend of erythritol and monk fruit. Both have little to no insulin response. Other options are SugarLike or plain organic erythritol.

TrueLemon is freeze dried lemon. No additives. It's like having fresh lemons in my home available at any time, I just have to add water. 1 packet equals about the juice of 1 lemon wedge or 1 tbs of lemon juice.

Chosen Food Avocado Oil. Most avocado oil brands have been deemed rancid, stretched or straight soy bean oil in a study done by UC Davis. Chosen Food Avocado Oil and Marianne's Avocado Oil were the only avocado oils that passed the quality test.

Ingredients: Cooking instructions:
  • mix dry ingredients in a small bowl
  • add Chosen Food Avocado Oil and mix well with dry ingredients
  • add the mix to the chicken wings and make sure they are evenly coated
  • bake at 375 in convection mode for 40 minutes until golden crispy
